- a rarefied sour savor with a salty flavor which turns to a sweetness nuttiness

Saint Maure de Touraine
- a straw runs through each log, promoting air flow and even maturation
- with age, expect a firmer, flakier texture, beneath a white and blue mold-mottled rind
- piquant, acidic, and walnutty
